Welcome to the Private Chef Show. I’m Helen Cho with Private Chefs, Inc. Today we are stepping outside the kitchen to take you behind the scenes of elite estate staffing.
To ensure the smooth operation and management of a prestigious property, it requires a diverse team of professional employees, each playing a specialized role in the ecosystem of the home. To provide a practical perspective, let’s look at a typical staffing structure for a 30,000 ft home set on a 1-acre estate. A property of this size can require a surprisingly large staff depending on the owner’s lifestyle, public profile, and the level of service expected.
The leadership usually begins with the estate manager, who oversees the overall operations, and often an assistant house manager. In a household of this magnitude, it is common to have two personal assistants, one dedicated to each principal, to manage their individual schedules and correspondence.
In the heart of the home, the private chef is responsible for the daily preparation of all meals. This includes menu planning, sourcing high-quality ingredients, and strictly adhering to all dietary health restrictions. If the household also provides meals for the rest of the staff, there’s usually a sue chef in place to support the operation. For clients requiring breakfast, lunch, and dinner 7 days a week, the rotation typically involves three full-time chefs. In fact, we have multiple clients in Los Angeles alone who utilize this three-chef model to ensure seamless 7-day coverage.
Furthermore, if a principal travels extensively, such as a Hollywood A-list actor filming on location for months, estates often employ two chefs, one to travel with the principal and another to manage the culinary needs of the family remaining at the estate.
Household requirements for a property of this scale are substantial. While a minimally staffed luxury property may operate with three or four full-time housekeepers, a fully operational ultra-high-net-worth estate typically employs four to five housekeepers, often including an executive housekeeper and a dedicated laundress. Estates running at an exceptionally formal level may even employ 10 to 20 domestic staff, effectively operating more like a boutique luxury hotel than a private residence.
Security staffing also varies based on the owner’s profile. For lower-profile principals, security typically ranges from 2 to four full-time personnel. However, high-profile figures frequently require 6 to 12 security staff to provide rotating 24/7 coverage. The most security-sensitive estates may operate like embassies, utilizing armed teams and advanced surveillance systems.
The exterior of the property is just as vital. For an ultra-luxury 1-acre property with formal gardens, the standard is typically 2 to four full-time ground staff. Additionally, a chauffeur provides safe transportation, while an accountant oversees the complex bookkeeping.
While every estate is unique, total staffing for active ultra-high-net-worth estates commonly ranges between 14 to 20 full-time employees. Having the right professionals in place is what allows an estate to truly function at its peak.
