Keeping a Log for Guests’ Preferences

Maintaining a food log for guests is an essential practice, as they may become regular visitors. The primary purpose of this log is to track important food and beverage information. More than just a record, it serves as a critical tool that assists the chef in planning ahead, and providing an enjoyable experience. 

Components of the Log

Guest Identification: Each entry in the log starts with the guest’s name and relationship to the host (e.g., family member, friend, business associate).

Allergies: Detailed notes on any known allergies (e.g. nuts, shellfish, dairy) are crucial. This information must be accurate and updated regularly to prevent health emergencies.

Dietary Restrictions: Whether for health, ethical, or religious reasons, any dietary restrictions such as pescatarian, kosher, halal, or lactose-free are recorded.

Likes and Dislikes: Recording food aversions helps in avoiding ingredients that guests might find unpalatable. Noting their beverage preferences, such as how they like their coffee, or what their favorite cocktail is and how to make it just right, adds to a personalized encounter. 

Previous Meals: Tracking past meals is useful for variety and ensures that the menu remains exciting and diverse over repeat visits. Similarly, a much-liked dish or cuisine style could be well-received at a later date.

Special Requests: Any special requests or favorite dishes mentioned by guests are noted to tailor future menus that resonate well with the guests.

Maintaining the Log

Tech savvy chefs will probably find it easy to update and reference a digital format, while others may prefer starting a physical folder with handwritten notes. But whether on paper or electronic device, the log must be updated with every visit, particularly noting any adjustments over time. The goal here, as ever, is service excellence.
