Design in Dining

Most of Creative Director Roberto Cortez’s time is spent cooking and doing events in Europe where he has collaborated with some of the best designers in the world to create dinners that guests never forget. These include artists of lighting, glassware, dinnerware, cutlery and culinary tools, as well as composers, architects and interior designers, all of whom bring crucial elements to the dining experience that, together with an incredible menu, creates a symphony of harmony.

At a dinner event showcasing the collaboration of designers to bring harmony from chaos, a minimalist setting showcased the food that was inspired by the designs.

The courses included:

  • Aquarello risotto, Sicilian coffee syrah wine glaze, shitakes, ginger, bacon powder
  • Caramelized endive
  • Brioche aromatic with campfire butter
  • Circle of nine dessert tasting using Amedei 9
